Pre-order
Let customers keep ordering a product after it sells out. There is no switch to turn on in the theme: a variant is shown as Pre-order on its own once it meets the conditions below.
When a variant shows as Pre-order
A variant becomes a pre-order variant when both of these are true:

Its available quantity is 0.

Continue selling when out of stock is checked for that variant.
Each variant is checked on its own. One color can be on pre-order while the others sell normally.
Set it up

In your Shopify admin, go to Products and open the product.

Open the variant you want to sell on pre-order (or the product itself if it has no variants).

In Inventory, make sure Track quantity is checked.

Check Continue selling when out of stock.

Click Save.
When that variant's quantity reaches 0, the theme switches it to Pre-order automatically. When you restock, it goes back to a normal add to cart.

Change the wording

Go to Online Store → Themes, click ⋯ next to your theme, then Edit default theme content.

Search for pre order.

Edit Pre order text (badge and button label) and Pre order note (the delivery message under the buy button).

Click Save.
Note: Pre-order only changes how the product is displayed. Customers still pay in full at checkout, like any other order. To take a deposit or charge later, use a pre-order app.
